I think you can break even in really big niches (mega niches!) like weight loss if you do one thing, and that is to narrow it down by going into micro niches within that big niche.
Like "healthy diet weight loss" or "fast healthy weight loss". You have to narrow down your niche by going for so called "long tail keywords". Then you can build a blog around that keyword and related keywords, and you should be fine - just make sure your keyword phrase is searched for a good number of times a month (at least 500), and that the actual website competition (what comes up when you enter your keyword phrase in your browser in quotation marks, like "healthy diet weight loss") is preferably below 200,000.
