For a site we are thinking of using a pseudonym for a blog as there are more than one writer and the owner of the site values her privacy. Has anyone done this before to create almost like a mascot for the business and to use in bylines?

People have been using pen-names, noms de plume, or pseudonyms for centuries in newspapers, magazines and books. So it is hardly surprising that many people are doing it online too in newsletters and blogs.
The wonderful people at Google, however, have taken a stance about people having to use their real flesh-and-blood names. Google+ accounts are only available for real unique humans. They would turn away, "copywriter", because real people have 2 names, and "Copy Writer39", because real humans don't have numbers in their names. (C0ldf1re speaks from sad experience on both points!)
Your name has got to sound "real" too. There is no use trying for a first name of, "The", or a surname of, "Incorporated".
If you do get a Google+ account under a pseudonym, you will be forever at risk of being discovered and having your account terminated.

Some my client choose to use their own names on by-lines and blogs but others prefer a pseudonym. I recently helped a successful businessman find a pen name.
