Well, I'm sharing what I have heard about pipe line.
Google consider "|" as a separator of different keywords in your title.
For example - If you write your title "Travel Deals | Tour Packages | Holiday Packages | Vacation Deals" then Google can easily recognize that you're targeting 4 specific keywords for this particular page.
But if you write your title without "|" then Google can create many keywords possibilities such as "Holiday Deals. Vacation Packages, Holiday Tour" and so on.

I think Google is smart enough. So "Pipe sign" or "Coma" does not matter. I know some SEO are not using the "Coma" also.
There is no special reason to use pipeline, but it is choice of the person what to use. For Search engine and user comma (,) or pipeline (|) is not important, it is used only for separate the words or keywords and to make it more readable. Personally I use mostly comma because when we use pipeline it takes 2 spaces before and after but when we use comma there is only one space after comma not before, so that way we can show more words in SERP
