We are planning to update our fishtravelguide.com web site. And now I like to hear your opinion about current implementation.
What you think about
1) layout
2) content
3) over all
What is the most important thing that we should do.

Looks like a tidy little website to me.
I do not like the font size increase for the navigation though.
also,
Fishing in Europe
"Trouts can be found from many rivers in Europe"
shouldn't it be TROUT?

One suggestion for you Change the font style and alignment of body, header and footer from left to Center. Very good creativity.

Viewing the source code, I see a lot of mixing of double and single quoted attributes. This is sloppy, and a poor practice to adopt. The recommendation would be to use double quotes, consistently, from top to bottom of your code.
Tiny detail: CSS => body { margin:0; margin-top: 0px; } The second margin property is redundant. Also, '0' is undefined, and therefore has no units, so '0px' is a misnomer.
To center your page, add a wrapping div around everything inside the BODY, and give it, CSS => #wrapper { margin: 0 auto; }.
I see no photo attribution on the page. Are these your photos, photos of a contributor to your site, or stock photos? No attribution 'could' imply public domain. Even a simple "photos copyright 2012" would at least indicate the photos belong to your site. A small detail.

Missed an important detail, you will need to add a width to the wrapper div, or it will be 100%, and no centering will take place. My apologies.
