    How long does it take to get listed on the search engines?

    hmm... it depends on the strategy you are following and more over if you are already ranking in top 50 then it usually takes a min of 90 days to get your site rank in the top 10 positions.

    you could literally rank #1 in a day for a very unique keyword!

    If you are attempting to rank high for a keyword that is saturated, then your guess is as good as mine. Unique keywords will be much faster but they key is to make sure that those keyword(s) are going to get searched. If people are not searching for your keyword then ranking high becomes irrelevant.
