Redesigning an ecommerce site and will be moving hosting which means a new IP. What should I worry about when we launch the new site as for as my ranking in Google? I have a PR of 3 and thousands of pages indexed. Is there any way around this?

The change in IP address does not matter for search engines. Just make sure that there is virtually no interruption of service when moving the site.

If page addresses change, redirect each old address to the new address that replaces it (must be a 301 redirect).

This is not related to search engine rankings, but when I've switched IP addresses in the past, I ask the ISP/web host to tell me the new IP address. I then do a search on the blacklists to make sure that IP is not in their databases. I had that happen one time and found out the first time I sent out emails and had them returned. I had to have the web host switch us to a new IP.

I recommend, getting the site up and running on the new host first. Wait for DNS rollover, then cancel hosting on the old server. I have done this everytime and have not had any downtime.

I agree with Carol that you need to scan for IPs especially smaller hosts with shared hosting.
