Does anyone know which specific categories of affiliate programs are more likely to attract customers? This is, of course, considering relevant meta tags, search engine optimization, promoting, etc. If there are demographics about this, where would they be found?

Locked in a vault that is buried under twelve feet of concrete which is located under a brick fort which is surrounded by twelve feet high barb wire fences topped with menacing coils of razor wire surrounded by a moat filled with alligators on a starvation diet. ;)
IOW, this is the type of info that smart businesses do NOT share with their competitors. Occasionally, you'll find inexperienced affiliates who like to share their success stories (I used to be one such affiliate), but a couple of years in the biz and they'll be building their own forts and ordering up reels of razor wire.
In the non-affiliate biz, you can often pay (and pay heavily) for such industry reports, but I think the affiliate biz is much too young and small to yet generate a large enough buying market for the Report Makers to spend a lot of time on the subject.
You'll find that most sites that DO report on such info report only on two-tier programs where they get a cut if you become an affiliate.

I don't know of any demographic reports per say. But the most popular and high earning markets for affiliates are the obvious ones and they are also the most competitive - financial (loans, insurance, etc.), dating, gambling to name a few.
