One with good support and who will manage the main stuff so that I can just look after my sites without having to worry about too many server settings?
I have not used any, but know some:
ServerPronto (http://www.serverpronto.com/), the cheap one.
ServerPath (http://www.servepath.com/), one more expensive but better?

My bolding.
May be it is not that easy, but you can upgrade software yourself, without waiting for the hoster to do it. In an XML world, where new technologies (http://www.webproworld.com/web-programming-discussion-forum/61639-xml-family-technologies-will-revolutionize-web-linking-etc.html#post330575) are introduces faster than we can imagine, that is not least important. The same with PHP if you use that language.
Look here Servers specifications for the forums listed on Big Boards (http://www.big-boards.com/servers.php) for more info.

It seems you will need a fully managed server, so the vendor will take care server, you just create accounts, and play with your websites. Are you looking for
- Linux or Windows server?
- any preferred control panel?
and
- how busy are your websites?
- how much can you spend per month?
Not sure about serverpath, but I believe serverpronto is a low-end provider, and it's unmanaged only.

Two questions:
Why do you need a dedicated server?
What is your budget?

Rackspace also does highly managed dedicated hosting, but I think they are somewhat more expensive.

As per request "...no worry") is definitely Unix/Linux managed server in the $170-$360/month range, depending how much "...worry" remains for you as admin.
