As long as I have been doing this I have been baffled by one thing.... When using any keyword suggestion tool they always give a singular version of keywords.... such as "vacation rental" I enver see plural version of any keyword ever in a suggestion tool.... Could anyone help me with why? I really cant believe singular is the way 99% of the se community searches, especially after doing some watching of live searches etc... on sites, including that of google, which offers a neat little tool.

I didn't post a vote -- that's a difficult question.
Totally market dependent. However based on human psyche when people are searching they normally want "choice"... thus plurals is a common self conscious act.
It should be noted though that (in general) it is an even split therefore your guide should be:
1. Do I offer more than 1, or choice on my site. If not, you may rank well, and even get tons of visitors (looking for choice), but the vast majority will look, and leave to find that choice, and the last site they visit -- is usually the one the buy from.
2. If you have many - the choice is both. Top level pages "plurals" and individual item pages "singular" - this only make sense.
3. Normally small websites can't capture both -- if you try you just dilute both efforts. In this event - my gut says plurals first, and expand your site -- then do singulars.
