Can someone explain to me what a poison keyword is and what they do to the ranking of your site in google?

Can't say I have heard of that one - BUT, my best guess would be that someone may have used the term to refer to the keyword(s) that Google has targeted on their "hit list" with the Florida filter. Some of these keywords are here http://www.scroogle.org/hitlist.html

I did a little poking around and this seems to be an older theory that some search engines will rank you poorly for using words that they might find offensive or competitive in nature.
There is an old article explaining it here (http://www.searchengineworld.com/newsletter/2000/poison_words.htm).
All of the threads I found on the subject were old with the exception of one where someone was asking if the poison keywords were still around. See

CBPJust had a look at the above link, are all the words/phrases listed really on googles 'hitlist'? If so, it seems a little harsh of them, the big G can't be that bad can they? I'm still trying to fully understand how the recent chages made by google affect my keyword choices, if at all!

A poison keyword is a word or phrase on a web page that causes a detrimental effect to page rank.
Poison keywords are nothing but a myth, the phrase probably being created by marketing companies trying to get more business.poison keywords within the page don't have any effect on the listing.

Poison words, are words that are known to decrease your pages rankings if a search engine finds them in the title, description or in the url. They don't kill, they just bury pages in rankings.

hi all,
nice discussion here. Poison Keywords or keywords poisoning.
I agree with "rohn" poison keywords express spam of keywords and as you are all know spamming kills website ranking. for example not related keywords to content in meta tag keywords are called poison keyword.
