Hi guys need a second opinion on this one.
I host ecommerce sites for clients (large turn overs - so I cant mess around too much)
I need a solid solution at a good price in Ireland but would I be better with 1 good dedicated server or multiple VPS.
Currently I use dedicated in the UK and US, but am open to new ideas.

Whereabouts in Ireland are you?
Do you need IRL and/or UK IPs?

I prefer cloud solutions over dedicated. This way you never worry about supporting hardware if it fails. Clouds are VPS solutions that are distributed among a vast array of servers with a huge bandwidth backbone! Not to mention you say you host commerce sites, your VPS Cloud server can scale on the fly if your server starts to get to much traffic! It's scalable and all you have to do is move a slider!
Please excuse me when I mention dedicated, I mean we owned our dedicated servers AKA collocated. If your renting dedicated servers, you still have to worry about hardware failure much more then you would with a distributed VPS Cloud server...
The best bang for the buck I have found is GigeNet.com
Our company switched from dedicated servers to cloud and have never looked back since!

Dedicated Server is always recommended. VPS may get overloaded if other users on a node consume more resources of the server. So, it is possible that you would face problems because of other users. Whereas, you own a Dedicated Server, you are solely responsible for the performance of your server.

With no offense intended, I have to only partially agree. VPS get overloaded just like Dedicated servers do if there are not enough resources to handle your services.
So, on that note, Dedicated servers get overloaded all the time - hence the use of load balancing.
If you choose VPS - try to steer away from companies that offer VPS solutions that are contained within a Dedicated server...
Try to use Cloud Solutions - Again clouds are VPS solutions that are scaleable and are distributed across hundreds of servers and are also redundant.

One dedicated server would be a single point of failure for ALL your sites. Given the choice between those two, I recommend multiple VPS.
