I agree with everyone - the site looks clean and professional. We build websites for accommodation. I see traffic always goes to Room Pages. People want to know what is in the rooms and see pictures. I would add a special section on rooms.
We also try to attract the long tail of search - so we create extra pages on things like location and attractions. Also, you have conference facilities - you should optomise a page to attract searchs for conference/hotels in your town. I think you need to focus more on keywords and make sure they are on every page.
I'm also fond of Google Maps.
Map of the Great Ocean Road They are getting so easy to set up and they can have as many dot points as needed. We have one where the owner marks fishing locations around the area. Watch maps.google.com as a travel portal. Make sure your business can be found there.
You need Live Reservations. People want to see what is available. The want seasonal pricing. They want to book and move on to another task. You need a secure payment system connected to an inventory management process.

There are many systems that can do Online Booking. Good ones also manage GDS bookings through Orbitz, Travelocity, Expedia, etc. Some will connect with your front office software and others are web-based. It's really no good making a new website today that doesn't have a point of sale.
