I have a couple of sites that gets traffic and has backlinks, but I don't maintain them any more. Would it have a negative affect with the search engines if I were to forward those domains to an active site?

Make sure you do a 301 redirect and you should have no problems.

What about the forwarding services that registrars offer? Is that the same as a 301 or is it better to point the nameserver to my host and then do a 301.

I just checked a few sites that I have forwarded and I cant tell what type of redirect is being used. I don't plan on ever using the forwarded domains because they are .net and .org for an existing domain, but if you do plan to in the future, you should make sure it is a 301.

I have a number of domains that are forwarded through my hosting company, all pointing to the same main domain (they are typos of the spelling of the main domain). They've been set up this way for years and I've never had any problems. Only the main site is shown in the search results. The search engines consider them all to be the same web site, with--for example--the same page rank assigned to them all. Alexa also reports exactly the same stats for each of the domains.
