Default is it easy to change to another website company
If we were to change from one company to another company is it easy enough for the new company to take over the running of our site and database without having to build a new one?

It's fairly easy. Most databases have a facility to dump their structure and contents to SQL instructions that can then be reloaded into a new database on a different host.
