Here's a general one that I hope you can answer. How do taxes work for a travelling worker? Do you pay taxes for Canada? the country you're staying at, etc? What about health care? Do you get travel health insurance?
I also have a Euro passport + citizenship, I'm sure I can use that to my advantage some how.

Yes, if you have a Euro passport you should be able to legally work anywhere within the European Union without any papers or permits for as long as you desire... nice!
If Canada is your primary residence you will pay taxes to Revenue Canada.
