you do display the pound sign.

Naturally displaying the pound sign (I think) is preferable. British visitors won't mind seeing it and American/Canadian/Irish ones will automatically know that pricing is in pounds.

I just don't care for the fact that the ONLY payment option is paypal. There should be a secure method on your site to accept Visa, Mastercard, Amex (or other credit cards that you think are popular enough in the UK to think about of course).

On the rollover itself. The color shades from lighter to darker as you go from left to right. At some point, in that color spectrum, the color matches the (yellow? mustard?) in the Keimos logo (which is good), but I don't like the fact that it is shaded from lighter to darker.

The transparency is problematic because if somebody is trying to focus on the drop down menu, their eye is invariably going to be drawn (at least somewhat), to the underlying text. The distraction, no matter how minor it might seem, should be eliminated.

Logos are difficult because whether people like them or not is inherently subjective. Notwithstanding there are a couple of objective things:
1. The tagline 'Targeting Your Training Needs' is a shade of blue that is a lighter shade of blue which is in your background. That is a poor contrast. On your other .co.uk site the background is a much darker blue (navy blue)
2. Let's say that the 'Keimos' in the logo is yellow, well, the 'Online Shop' is not only using larger font, but its also shifting color to orange AND its using a different font (or Keimos is italicized)
