It would if we were being picky here, but we were just expressing an appreciation for butter instead of lard in cookies, weren't we? And I was generalizing from there.
So, where would *you* *not* want butter for the 'fat' in a recipe?
Yes, there are some recipes where butter would not be welcome ... but I can't think of one at the moment ...
Now, there are certain dishes where one would prefer the base be, let's say, olive oil ... but then to add a couple of dollops of butter to that would probably, in most cases, improve the dish. Or so I see it ...
